Masterclass on “recognize quality chocolate” plus wine & spirits pairing with chocolate, worldwide recognized really difficult, so only real experts will accomplish it right!

Experiment on your own the use of chocolate and cocoa in traditional Tuscan plates, with the perfect pairing of wines & spirits.

This is an example menu, the real menus will vary accordingly to seasons.

  • Aperitif: “Tuscan spritz with Amarancia”.
  • Appetizers: Chick peas “pizza” with fried courgette flowers, burrata, anchovies and capers + Scented & sweet onions from Tropea simply baked & lightly dressed + Delicate small goat cheese flan flavored with local honey and a little ginger.
  • First Courses: Homemade thinner tagliatelle with courgette flowers, topped with fresh truffle OR Saffron flavored risotto with scented porcini mushrooms and Horns of plenty mushrooms powder OR Salted codfish “pici” with 3 varieties of pepper grains and pistachios pesto.
  • Main Courses: Tender beef fillet spiced with a delicious sauce and sprinkled with pink pepper berries, julienne of sugar-coated savoy cabbage and plain chocolate OR Boned meat of chicken, rabbit and lamb deep-fried in oil together with a mixture of fresh vegetables OR Codfish in tomato stew with green sauce and potato chips.
  • Desserts: Bavarese flavored with white chocolate, garnished with pistachio cream OR Slice of chocolate terrine with peppermint oil & cocoa sorbet OR steamed soft “tiramisù”.
