The TRUFFLE ACADEMY in Tuscany Truffle HUNTING & COOKING – Masterclass version
Received by an expert truffle hunter in a classic ancient Tuscan farmhouse on the green hills near Pisa, immersed in centuries-old woods with natural truffle grounds where your truffle hunting will take place.
The warm and welcoming rustic Tuscan environment, with fireplace and open kitchen, is the setting for your lesson on the world of truffles and lunch with cooking class.
We’ll move on a walk to the most suitable wood according to the season (in search of the “scorzone” truffle, in the pine forest for the search for “bianchetto”, or further downstream for the search for “fine white”).
On return cooking class is led by our Chef on the secrets of truffle dishes, then a special truffle based lunch that enhances what we found in the woods and exploits the things learned in the kitchen: truffle aperitif, fresh truffle pasta with fresh truffle, truffle egg, truffle dessert.
All paired with local TOP wines, according to our experience of several generations.

Unique experience aimed at true truffle lovers!
You will learn to recognize, select and cook the diamond of the forest.
It will be our exclusive pleasure to reveal to you the secrets that the Savini family has handed down for generations to select and process the best truffles and we will be happy to satisfy all your curiosities about the world of truffles.
Besides truffle hunting, this experience includes a cookery course with our chef in the kitchen classroom.
Special gift for all participants (Savini Tartufi chef’s apron or cooking book) as well as joining in the preparation of the meal.
You will see how to clean and use the fresh truffle in some traditional truffle recipes.
Learn many secrets to better use the different varieties of truffle.
Sample recipe: Truffle tagliolini (fresh pasta)
Put a saucepan with water on the stove, to boil – Prepare the butter in a pan together with the cream with Parmigiano Reggiano and Truffle – As soon as the water in the pot has reached a boil, add salt to taste. and throw in the pasta – Turn on the pan, over low heat, when the pasta is almost cooked – As soon as the water in the pot has reached a boil, add salt to taste. and throw in the pasta – Strain the pasta after 8 minutes, leaving aside a little cooking water – Place the pasta in the previously prepared pan – Skip the pasta by adding a little cooking water – Serve and add the grated fresh truffle.
