The Giannellis, family of butchers for over 6 generations, welcomes you and teaches how to make sausages with your hands.

A unique journey into the heart of tradition accompanied by a family member.

Live a multi-sensory experience inside our historic salami maturation cellar, a suggestive environment, where you can taste the best of our specialties.

We will discover together the secrets of the production that make cured meats so special, starting from the most ancient processes to the most modern.

You will even be able to produce sausages with your own hands which will then be sent to you at the end of maturation!

You will try the top of Giannelli cured meats expertly combined with the delicious products and wines of the Apulian tradition.

So your Ambassador of the family will also accompany you to a LUNCH completely created ad hoc for the perfect experience focusing on our meats & salami, also in pairing with a Wine Spectator Top 100 wine.

Stories of cured meats & other pleasures.

A family story born out of love for one’s land and a strong tradition over time.

Family of butchers for over 6 generations, Giannelli Salumi was born as an old shop in the center of Troia which has now become a signature of Italian gastronomy in the world.

We follow the entire supply chain from the breeding and selection of animals, coming from nearby pastures, to their processing with artisanal methods based on honey, wine, garlic and peppers, without the use of any chemical expedients.

One day as a producer of Apulian cured meats

  • Arrival at the company & welcome APERITIF and/or coffee and soft drinks
  • Reception at the “Alba d’Oro” bar with landscape view.
  • MEETING with the company owner, as well as a member of the Giannelli family, who will exclusively follow our welcome guests for the whole day (English speaking).
  • Private VISIT to the SALUMI AGING CELLAR, the only one of its kind in Puglia, in the historic center of Troia.

Laboratory cooking class

  • Laboratory-cooking class of seasoned sausage production from the Dauni mountains that at the end of the seasoning process (about 30 days) will be sent to guests to let them taste the product they made with their own hands (shipping possible only in the EU, not USA or CANADA)
  • Private guided TASTING of TOP products (selection of cured meats from the “VERO Pork” line – top of the Giannelli production range) with perfect pairings of local wine glasses.
  • Visit to the company store.
  • LUNCH based on meat and cured meats of our production, prepared at the Contemporary Gallery Bistrot located a few steps from the cellar.
  • In the AFTERNOON, if desired, guided tour (in English) of the Cathedral of Troia and of the historical centre.

  • Chef’s welcome: Bean foam, puffed rice, crunchy guancel, dehydrated black olives and pesto powder
  • Appetizers:
  • Raspberry like a tartare (fassona meat), orange ponzu, crispy pepper pods and oil “nuvola”
  • Colored bracioletta donut, pecorino, basil, baked tomato and black garlic
  • First course: Parmigian in a risotto
  • Main course: Beef cube, buttered chicory and “Nero di Troia” wine reduction
  • Pre-dessert: Lemon and “land” of chocolate
  • Dessert: “Chicco-cremoso” with mascarpone, vanilla ice cream and cocoa tapioca

  • FULL DAY SIGHTSEEING IN LUXURY CAR, LIMO, VAN OR HELICOPTER with English speaking professional driver/pilot. Departure from any main location, example Rome, Civitavecchia, Livorno, La Spezia, Milan, Florence, Bologna, Venice etc.
