Hello, let me introduce myself: my name is Vincenzo, I’m 37 years old and I manage the Pioggia Dairy here in Martina Franca together with my brother Giovanni.

I started the cheese making profession as a child in my uncles’ laboratory, first as an apprentice and then with ever greater responsibilities.

The company was very small, and has always produced dairy products and cheeses according to the canons of local tradition, with milk selected from a few carefully selected farms in the area, without strange artifices, chemical products or modern “shortcuts” of various kinds.

Over the years we have slowly made the company grow, both qualitatively and commercially: today we are a small business reality of great quality, we are awarded in international competitions and proudly serve prestigious customers all over the world as, last but not least, The Ritz-Carlton in Osaka, Japan

An unforgettable day in the middle of cheeses and wines

  • Meeting at the dairy with your private Ambassador, usually Vincenzo Colucci himself.
  • Start of show cooking of the real production of mozzarella and burrata, followed by production by the guests in cooking class mode.
  • Then guided tasting of dairy products (nodini, burrata, fresh ricotta, primo sale) and homemade taralli.

Transfer to Villa Anní, still owned by the Colucci family.

  • Show cooking & COOKING CLASS of LUNCH preparation in the company of an expert cook: handmade orecchiette, handmade capocollo chops, handmade bread balls, etc.
  • Lunch on a convivial table with the hosts, tasting what has just been prepared together with other specialties and the Apulian wines of the Wine Spectator Top 100.
  • After the big lunch, different activities will be proposed according to the season, such as picking wild herbs, asparagus, mushrooms, grapes, vegetables from the gardens, etc…
  • For those guests who prefer to relax in peace, various areas of the property will be freely available, such as the swimming pool or the “lounge” area.

The creation of high quality traditional cheeses has been at home at Caseificio Pioggia for over 50 years.

Our cheeses are all made with the best local milk and typically artisanal.

Our Caprino cheese with wild fennel has entered the list of the best cheeses in Italy, awarded in the Alma Caseus competition with the silver medal, and the gold medal won by our Caciocavallo della Massaia.

We also like to providing our cheeses and dairy products with a suitable location for their quality and relevance: our new “trendy” shop.

The great show of the typical rustic Apulian cuisine in pairing with Wine Spectator Top 100 wines (sample, it could vary seasonally – also in vegetarian version)

  • APPETIZERS (enough to make a whole meal by themselves…): Martina Franca cured meats (Martinese capocollo, stretched bacon, sweet and spicy salami) – Cheeses or dairy products that have not already been tasted in the dairy (caciocavallo, “drunk” caciocavallo with Primitivo, Apulian canestrato, strong ricotta) – Acquasale from Puglia with barattiere, cherry tomatoes, celery and oregano – Broad beans and chicory – Cornaletti with hanging tomatoes, basil and Apulian cacioricotta – Zucchini Poverella – Homemade artichokes in oil with mint – Fried bread balls
  • FIRST COURSE: Orecchiette (homemade) with chops sauce and stewed meatballs in the same sauce
  • MAIN DISH: Braciole with gravy (can also be donkey) served with grilled seasonal vegetables
  • DESSERTS (plus Seasonal fruit): typical Apulian desserts such as “sporcamusi”, “noun’s breast”, “bocconotti”.
  • SPIRITS: rosoli (homemade)
