The BARLOTTI family dairy, a tradition of absolute quality & authenticity, of cheeses made as in the times of the Homeric heroes.

The Barlotti Dairy breeds buffaloes and transforms their milk to create one of the best buffalo mozzarellas.

A family tradition from the beginning of the 1900s: mozzarella, yoghurt, ricotta, cheese, meat, desserts and the first innovative line of natural cosmetics produced with buffalo milk.

Our buffaloes graze in these uncontaminated fields, in this land once known as Magna Grecia.

The forage is collected in our fields, alfalfa, corn, straw and hay, which we fertilize with the manure of our animals.

We recently created Biancamore, the first line of cosmetics produced with buffalo milk with extraordinary beneficial effects for the skin.

We are in Paestum, a UNESCO World Heritage Site. The ruins of Paestum are famous for their 3 ancient Greek temples in the Doric order, dating from about 550 to 450 BC, which are in an excellent state of preservation. The city walls and amphitheater are largely intact, and the bottom of the walls of many other structures remain, as well as paved roads.

One day as an Italian cheesemaker in a UNESCO World Heritage site

Arriving at the dairy, guests will be served a welcome aperitif, sweet & savory, in internal room or in the garden.

Meeting with a family member who will accompany the guests on an exclusive and private tour in our laboratories.

Guests will see production of buffalo mozzarella and, surrounded by the scents of milk, they’ll be able, under the careful guidance of our collaborators, to try their hand at the art of “mozzatura” (i.e. produce a mozzarella).

They’ll then visit the spaces dedicated to the other products in our wide range, from yoghurt to fresh and aged cheeses.

Cheeses awarded in various international competitions such as the World Cheese Awards.

The tour continues with a visit to the livestock farm, entering the stables and touching the beloved animals with your own hands.

Here a detailed explanation of the production and life cycle of a buffalo will be made.

Under the guidance of our collaborators, guests will enter the synergistic vegetable garden, where they’ll receive explanations regarding this type of cultivation that takes place in full respect of nature, and will be able to harvest vegetables.

Lunch will take place in an exclusive location not used by other customers.

You’ll be able to savor our dishes and of course you’ll taste the most exclusive cheeses of the company, the real family pantry of the cheesemaker.

All dishes are made with products from our company, therefore at “zero miles”, from milk derivatives, to vegetables and with the use of buffalo meat.

Everything will be perfectly paired with the best wines from Campania, even from old vintages.

Among the wines served, a selection of Campania wines from the Wine Spectator Top 100 list (e.g.: Feudi di San Gregorio: Falanghina Sannio, Fiano di Avellino, Greco di Tufo – Mastroberardino: Taurasi Radici, Taurasi Radici Riserva – Di Meo: Greco di Tufo G).

After lunch, guests will be accompanied by an expert private guide to visit the exciting archaeological excavations of Paestum declared by UNESCO as
a World Heritage Site.

The great lunch of the buffalo cheesemaker

  • Appetizers: “bocconcini”, “ricottine”, “provolette”, mixed fresh & aged buffalo cheeses, Cilento ham, seasonal side dishes.
  • First course: ravioli filled with buffalo ricotta with buffalo butter and sage
  • Main course: sliced buffalo sirloin with rocket and cherry tomatoes
  • Dessert: buffalo ricotta crumble with chocolate flakes.

Not just any place but that place you carried inside and one day, by chance, you arrived there.

Here, in addition to mozzarella, ricotta, cheese, buffalo meat and vegetables from the garden, you will find cakes, ice cream and buffalo milk yogurt to be tasted directly on the farm.

You have to be able to perceive all this to fall in love with it every time, a perception that starts from the brain, through the story and resolves itself on the palate through tasting.
