Ice cream as we know it today and the machines for making it were invented in the Renaissance in Florence: right here you will learn how to prepare the most classic Italian ice cream (the Buontalenti Cream), Cantucci (Tuscan almond cookies), Vin santo cream and Zuccotto gelato Fiorentino (dedicated to Queen Caterina de’ Medici…)…
The cooking school of chefs Benedetta Vitali (who today collaborates with the last descendant of the Medici, Mrs. Lorenza de’ Medici), Giorgio Pinto and Meri will be reserved exclusively for WFTI guests.

While you attend the class staff in the kitchen will prepare a full Tuscan lunch, with Wine Spectator Top100 wines.
You’ll receive a brief historical and theological introduction and a very practical training on Ice Cream, you’ll go out with both the knowledge to recognize real quality and artisan gelato from “fakes” and the skills to try and make it for your family at home.

Typical dessert of the Florentine culinary tradition, the “Zuccotto” is a fresh dessert suitable for the warmer seasons such as the final part of spring and summer.
Known as “l’Elmo di Caterina” (in honor of Queen Caterina de’ Medici and that it had been given the name “Helmet of Catherine” because the first zuccotti were made using a small helmet as a mold, in use at the time by the infantry of the Florentine army).
The origin of the zuccotto is lost in ancient times in our Florence: according to some versions, the dessert was invented by the multifaceted architect Buontalenti.
The zuccotto is a “dome” of sponge cake dipped in alchermes, hence the pink color, and accompanied (in the classic version) by ricotta cream, chocolate chips and candied orange.
It was the Florentine Bernardo Buontalenti, architect, sculptor and painter who elaborated the ice cream recipe on the occasion of an official visit from the Spanish court to the Florentine one.
Ingredients: a mixture based on milk, honey, egg yolk and a drop of wine that worked with a machine with rotating spatulas invented by him, the first rudimentary ice cream maker.

We offer skills in traditional Tuscan Culinary Arts with a modern twist.
The project is a collaboration between the world renowned Florentine DOC Chef Benedetta Vitali and two young Florentine aficionados dedicated to preserving their Tuscan heritage:
Paolo Dellafiore & Chef Giorgio Pinto.
We believe that all culture can be observed, learned and maintained through its food, wine and enogastronomic social practices.
The knowledge coming from our tradition is well blended in our work with the most recent evolutions and other cultural influences in the gastronomical field.
We are tradition lovers, but always chasing for refreshing our sight on it.
We take food and cooking very seriously.
But, this doesn’t mean that our courses are bookish. On the contrary, they are fun, challenging and hands on.
Offering participants of all levels not only to learn recipes but to really soak up Tuscany’s food culture.
Eat and drink to delight your senses but just a little of EVERYTHING will keep you healthy wealthy and wise!
